Hints and tips for cooking with both green and red chiles will be completely spelled out. Also, the healthful benefits, history and lore will be taught.

Jane Butel is an internationally renowned teacher, first to write and popularize Southwestern cuisine. The best-selling author of 18 cookbooks she conducts cooking schools, culinary tours and is now teaching online.

Cruise explores a harsh universe of thinning ice

It's well past midnight, but the sun is still gleaming just behind jagged peaks, washing the sky with a rosy shimmer. A waterfall gushes from a rocky cleft beneath the downy hood of a glacier. Light glints off the ice floes like sequins scattered on the calm water before us.

No one can bear the idea of going to bed.

"It's just amazing," says Martina Becker, a German woman clinging to the endless day. "Everywhere you look there's ice pouring down. I think this is the most beautiful place I've ever seen."

Someone spots a disturbance in the water ahead, and we dash to the front of the glassed-in deck just in time to see black fins roiling the water. A whale, we suspect.

Or maybe not. In this surreal universe north of the Arctic Circle, possibilities seem infinite.

Juvenile offenders offered training

SAN BENITO A charter high school and vocational training program is being expanded to serve 75 or more youthful offenders at a time, using a former branch county tax office as its new home. The Thomas M. Buzbee Career Academy, housed in the Art Goolsby Building, will be the main site for the charter high school program. Academic diplomas will be awarded to graduates, said Tommy Ramirez, chief executive officer of the Darrell B. Hester Cameron County Juvenile Justice Center. A high school equivalency diploma program will be offered for juvenile offenders 16 and older who participate in a variety of vocational training courses, such carpentry and bricklaying, Ramirez said. The program, which will be operated by Gulf Coast Trade Center Inc. of Waverly, Texas, has already been in operation on a very limited basis for four years at the Hester center, Ramirez said.
